Celeriac is a very undervalued vegetable in Australian culture. White Alabaster is a variety of Celeriac that produces a delicious bulb to 10cm in diameter. It is used cooked in soups, stews, or raw in salads and grated or juiced.

It can be stored in the refrigerator or in a cold place for long periods once harvested. The leaves can also be eaten like celery. It grows best during the cooler months.

Grow Notes
Plant in part sun in well drained, moist soils. Once seedlings are big enough plant into the garden, in well drained soil enriched with compost, 30cms apart in 80cm rows. Or grow in containers.

Side shoots should be removed to encourage a larger root.

Sow
Raise seedlings in Spring, late Summer or Autumn by planting seeds 5mm deep in seed raising mix.

Keep soil moist, not wet.
