Old favourite, best known Australian variety for 150 years, long smooth white pointed root, tender, fine flavour. Pre 1852. The Parsnips Latin name is Pastinaca sativa. This one originated in the Mediterranean in ancient times. It is great steamed and baked, stews are also a great option for this luscious veggie!

Grow notes:

Parsnips like a stone free soil that has been manured for a previous crop, so it’s a good idea to remove your last crop and plant them direct right away, no need for more preparation!

Position: sun or partial shade.

Sow: 5mm deep and 30cm between rows. Cover slightly and you can also cover with a couple of layers of newspaper to keep out the little thieves that love the seeds. Keep moist but not wet. A bit of frost can improve the flavour.

Germination: Up to 3 weeks depending on the weather conditions.

Harvest: When the tops die down. Roots will last in the ground as long as it does not become waterlogged.

Maturity: 21 weeks.
