Every part of the fennel plant is edible — the leaves, stems, seeds, and bulb — and each has its own flavour and use. Fennel grows as a tall, upright plant with fine, feathery foliage and yellow umbrella-like flowers. It can reach up to 1.5–2 metres in height in good soil. It thrives in full sun and well-drained soil and is tolerant of dry conditions once established. It is best grown away from dill and coriander, as they can cross-pollinate and affect seed flavour.
How to Grow From Seed:
Sow fennel seeds directly into the garden in spring or autumn, as it dislikes being transplanted.
Plant seeds about 0.5–1 cm deep in rich, well-drained soil and keep moist until germination, which usually takes 7–14 days.
Thin seedlings to 25–30 cm apart once they are large enough to handle.
Fennel prefers full sun and regular watering, especially during dry spells.
Harvest young leaves for fresh use and allow some flower heads to mature for seed collection.
Cut back after flowering to promote regrowth and extend the plant’s life.
