Measuring in between 350,000 to 500,000 Scoville Heat Units, the Red Habanero was the world’s hottest chilli before it was taken over by the Red Savina in 1994 (super-hot varieties have since taken over).

The Habanero is commonly used in sauces. The Red Habanero ripens to a bright red. Its skin is thin and waxy with some wrinkling. Their pods have a distinctive lantern-like shape.
Growing Tip: Plant in a sunny position in garden beds or in a pot 35cm or more in diameter. Prepare soil with matured organic matter or a general purpose fertiliser. If planting in pots use an Australian Standards potting mix. Liquid feed with a general purpose fertiliser regularly.

Originally from Trinidad Island, South America, the Trinidad Scorpion Cardi Chilli is used in various local dishes that require extreme heat. Handle with care, as it is only slightly milder than the Trinidad Scorpion Butch Taylor, a Guinness World Record holder. When handling these chilli pods, wearing gloves is recommended. They can be used fresh, dried, or ground.

The heat level of this chilli is super hot!

This chilli adds intense heat to any dish when used sparingly. The pods transition from green to yellow over time and resemble a scorpion’s tail, which gives the chili its name. When fully grown, the Trinidad Scorpion Cardi Chilli can reach up to 90–120 cm in height, producing an abundance of fresh fruit during the chili season, which lasts approximately 4 to 6 months.

The peppers are bright green when immature and gradually turn red as they mature, although they are often harvested and consumed in their green stage.

To grow Skinny Green chili from seed, begin by sowing seeds indoors around early spring (September to October). Use a well-draining seed-raising mix and plant the seeds about 5 mm deep. Keep the soil consistently moist but not waterlogged to facilitate germination, which usually occurs within 1-2 weeks under optimal conditions.

Once the seedlings have developed their first true leaves, they can be transplanted into larger pots or directly into a prepared garden bed. Choose a sunny location that receives at least 6-8 hours of sunlight daily. Ensure the soil is fertile, well-draining, and enriched with organic matter.

Maintain consistent moisture levels throughout the growing season by watering regularly, particularly during dry periods. Avoid water logging the soil, as it can lead to root rot.

Description

Bird’s eye chilli peppers are frequently used to add spice in Southeast Asian cuisine. These small chillies grow on compact bushes in hot weather climates. Whether raw, dried, or cooked, these potent peppers pack real heat, making them ideal for spicing up dishes or creating fiery sauces.

Bird’s eye chillies are small, thin, and pointy, turning red when mature. They are green when unripe but can still be eaten, and sometimes appear orange or purple depending on their maturity. In Thai cuisine, green peppers are typically used in green curries, while the hotter, mature red peppers are used in red curries. When fresh, they often have a stem still attached and contain loose, edible seeds that are especially spicy. The peppers can be used whole, sliced, or seeded and diced.

Bird’s eye chilli peppers are extensively used in Thai, Vietnamese, Malaysian, and Indonesian cuisines. Fresh or dried chillies are added to salads, stir-fries, curries, sauces, sambals, soups, and marinades. The stems are removed, and the chillies can be left whole, sliced, diced, chopped, or pureed. The seeds are particularly spicy and can be removed for less intense heat.

It’s advisable to wear gloves when working with these chillies, especially if you wear contact lenses. Capsaicin, the chemical in the pepper that makes it hot, can remain on your fingers for several hours and can cause a painful sting if you touch your face, particularly the eye area.
