Mung beans, known scientifically as Vigna radiata, are an ancient legume that has been cultivated for more than 4,000 years. They originated in India, where they became an important food crop and were later spread throughout Asia, particularly into China and Southeast Asia, before reaching other parts of the world. Today they are grown widely in tropical and subtropical regions, including parts of Australia, as they thrive in warm climates and produce quickly.

Medicinally, mung beans have long been regarded as highly beneficial. They are rich in protein, fibre, folate, iron, magnesium, and antioxidants. In traditional Ayurvedic and Chinese medicine, mung beans are considered cooling to the body, often used to reduce heat-related conditions such as fevers, inflammation, and high blood pressure. They support digestion, promote heart health, and help regulate blood sugar due to their low glycaemic index. Their antioxidant compounds, including flavonoids and phenolic acids, assist in protecting cells from oxidative stress and may support overall immunity.

One of the most popular uses of mung beans is for sprouting. Mung bean sprouts are a staple in many Asian cuisines and are valued not only for their crisp, refreshing texture but also for their dense concentration of nutrients. Sprouts are especially high in vitamin C, which is absent in the dried seed, and the sprouting process makes the beans easier to digest while increasing the bio-availability of many minerals. They are commonly used in salads, stir-fries, soups, and sandwiches.

How to grow from seed:

To grow mung beans from seed in Australia, plant them in late spring through summer when the soil has warmed, as they need consistent warmth to germinate and grow well.

Choose a sunny position with well-drained soil and sow seeds about 2 to 4 centimetres deep, spacing them around 10 centimetres apart.

Mung beans germinate quickly, often within four to seven days, and grow into bushy plants that fix nitrogen in the soil, making them excellent for crop rotation.

They require regular watering but should not be waterlogged, and they mature in about 90 days, producing slender pods containing the small green beans.

For sprouting, mung beans are grown very differently. Simply place a small amount of dried mung beans in a jar or sprouter (we have a choice of two sprouters in stock), rinse them thoroughly, and soak them overnight in clean water. The next day, drain and rinse the beans, keeping them in a dark, well-ventilated place. Rinse and drain twice daily, and within three to five days the beans will develop crisp, white sprouts ready for eating. Sprouts should be consumed fresh and stored in the fridge once harvested.
