The Burdock plant is a hardy biennial herb originally from Europe and Asia, where it has been grown and foraged for centuries. In Japan it is known as Gobo and is still widely eaten as a root vegetable. It has long, slender taproots with a nutty, earthy flavour, and large, broad leaves that give the plant a bold presence in the garden.

Burdock root is packed with nutrition. It is rich in fibre, vitamin C, vitamin E, potassium, magnesium, manganese, and inulin (a prebiotic that supports gut health). Traditionally, it has been valued for its cleansing and detoxifying properties. The roots are used in soups, stir-fries, and stews, while young shoots can be eaten like asparagus. The flavour is mild, earthy and slightly sweet.

How it Grows
Burdock is a biennial, producing a rosette of large leaves in its first year and tall flower spikes in the second. The roots are long, white to brown, and can grow 30–90 cm deep, so it does best in loose, well-dug soil. The flowers are purple, thistle-like blooms that attract bees and butterflies. Plants can grow up to 1.5–2 metres tall if left to flower.

How to Grow From Seed:

Sow directly into the garden in spring or autumn.

Plant seeds about 1 cm deep in well-prepared soil and keep moist until germination, which usually takes 1–2 weeks.

Thin seedlings to about 15–20 cm apart.

Burdock prefers full sun and well-drained soil.

Because the roots grow deep and long, avoid rocky or heavy clay soils.

Harvest roots in the first year when they are still tender, as older roots can become woody.

If left to grow into the second year, the plant will flower and self-seed readily.
