Star Anise Tree, Illicium verum, is an evergreen tree native to southern China and northern Vietnam, where it has been cultivated for centuries for its highly aromatic fruits and ornamental value. The tree produces the familiar star-shaped pods that are widely used as a spice, particularly in Asian cuisine and traditional herbal preparations. It has long been an important crop in Chinese culture, both for culinary use and traditional medicine.

Nutritionally and medicinally, star anise is valued more for its aromatic compounds than for vitamin content. The dried pods contain essential oils rich in anethole, along with antioxidants and antimicrobial compounds. The spice is commonly used in broths, curries, baked goods, and spice blends such as Chinese five-spice. It has a warm, sweet liquorice flavour and is also used in herbal teas to support digestion and soothe coughs. Only Illicium verum should be consumed, as other ornamental Illicium species can be toxic, so correct identification is essential.

The Star Anise Tree grows as a small to medium evergreen tree with glossy, dark green leaves and pale yellow to pinkish flowers that later develop into the distinctive star-shaped fruit. It prefers warm, humid climates and sheltered conditions, performing best in frost-free or very mild areas of Australia. The tree can reach five to eight metres in height over time and is attractive as both a spice plant and an ornamental specimen.

How to Grow From Seed:

Use fresh seeds whenever possible, as viability declines quickly.

Sow seeds in spring in a well-draining, humus-rich seed raising mix, planting them about one to two centimetres deep.

Keep the soil moist and place in a warm, sheltered position out of direct harsh sun.

Germination can be slow and irregular, often taking four to eight weeks.

Once seedlings are large enough, transplant into individual pots and grow on in a protected environment before planting into the garden.

Choose a position with partial shade, shelter from strong winds, and consistently moist but well-drained soil.

Star anise trees are slow growing but long lived and rewarding once established.
